A tribute to the calissons d’Aix

A fan of simple pleasures and good products and being respectful of traditions, Léandre Vivier wanted to create a galette that evokes childhood memories. So, he put all the flavours of calissons d’Aix in there. In a croissant dough which gives it a brioche effect, Léandre has placed a frangipane cream comprised of honey, Provence almonds and orange blossom. The textures are equally alluring, with the softness of the cream and the croissant dough admirably complementing the crispness of the exterior. The beautiful golden colour and the elegant and discreet decoration help to make it an aesthetically delightful galette rich with the flavours of childhood.

The biggest names have passed through the Châtelet since its inauguration under Napoleon III. Saint-Saëns created his Danse Macabre there, Around the World in 80 Days was performed on its stage more than 3,000 times, and Tchaikovsky, Massenet and Mahler directed their works there. Léandre Vivier is more than a chef pâtissier, he is a true artist and magician. Particularly inspired, this year he created a bûche de Noël (Christmas log) that will delight your eyes as much as your taste buds. An elegant, stylised fir branch, it combines sweet and tangy flavours with foamy and crunchy textures to bring about a perfect balance. Discover it at the Baudelaire restaurant of the Hôtel Le Burgundy!

The spirit of the Burgundy

Beautifully designed and elegant, the Hôtel Le Burgundy is a showcase for the works of the artist Guy de Rougemont, a member of the Académie des Beaux-Arts. His sculpture which occupies the space under the Burgundy glass roof particularly inspired Léandre Vivier, our chef pâtissier, in creating his bûche de Noël. Taking up the sculpture’s generous and aesthetic curves, he imagined a dessert evoking the supple shapes of a stylised fir branch. Delicate and appealing, the bûche combines warm orange tones with a dusting of immaculate white, representing snow.

A subtle and delicious combination

To compose his festive dessert, Léandre Vivier combined a gourmet almond biscuit with a marmalade of candied yuzu peel, lime and lemon caviar. Generously coated with a propolis foam, it combines notes of honey and beeswax with the freshness of citrus fruits and the deliciousness of almonds, in a perfect balance. As work on Notre-Dame Cathedral, in the heart of the Ile de la Cité, draws to a close, the world's largest museum, Le Louvre, presents its treasures to the public. Before these exceptional pieces return to the crypt of Notre-Dame, come and admire them during your stay at Hôtel Le Burgundy.

A thousand years of history

From October 18 2023 to January 29 2024, the Louvre will be exhibiting the pieces that make up the Notre-Dame treasure. Comprising liturgical objects, relics and offerings, this treasure brings together items representing almost a thousand years of devotion. Although the treasure was dispersed during the French Revolution, it has been patiently reconstituted over time and enriched with new relics, for example from the Sainte-Chapelle. Thus, Le Trésor de Notre-Dame. From the origins to Viollet-Le-Duc features some 120 pieces, veritable masterpieces of goldsmith's art.

Follow the journey of these objects

The items in Notre-Dame's treasure trove are moving in more ways than one. The religious aspect is of course very much in evidence, with relics such as the Crown of Thorns and the Wood of the Holy Cross. The exhibition also offers a magnificent summary of the evolution of silversmithing techniques and styles. Finally, the many documents gathered - illuminated manuscripts, inventories, historical accounts - bear witness to the complex destiny of the pieces in this treasure trove, and prove absolutely fascinating. From the early Middle Ages to the cathedral's renaissance under Viollet-Le-Duc, the history of Notre-Dame is reflected in the aesthetic, meticulous scenography. It's a great opportunity to admire these exceptional documents and objects all in one place.

A conversation in painting rather than words

In New York, 1984-1985, the young painter prodigy Jean-Michel Basquiat established with Andy Warhol, for whom he had a deep admiration, a relationship of friendship and creativity in which their ‘four hands’ paintings allowed them to share and explore while pushing creative boundaries. The Fondation Louis Vuitton exhibition focuses on this year of exceptional creative fertility and the artistic work that emerged from it. We see how the two artists surprised each other, the introspection that this experimental approach provoked, and the fusion of inspirations which resulted in canvases on which their individual personalities mingled to create what was effectively a third, making it almost impossible to distinguish who did what.

A fascinating journey

The Basquiat x Warhol exhibition begins with a series of cross portraits, marking their first collaborations. There follows some fifteen three-part works with Francesco Clemente, an Italian painter who joined them for a while. Finally, the route leads you to the essential paintings that truly symbolised the fusion of the two artists: Ten Punching Bags (The Last Supper) and African Mask. No fewer than 300 artifacts have been gathered for this exhibition, including 80 paintings signed jointly. A true aesthetic and graphic eye-opener.

Less than thirty minutes by Metro from the Hotel Le Burgundy, the Fondation Louis Vuitton welcomes you to the heart of the Bois de Boulogne. A course of excellence

Léandre Vivier is a young chef with many talents and passions. Having realised what his vocation would be, he launched a demanding career in which he passed through various top establishments. Recognised by his peers as a Meilleur Ouvrier de France ten years ago, he also won an early season of the television show Qui Sera le Prochain Grand Pâtissier? (Who Will Be the Next Great Pastry Chef?) but continued to improve on even that achievement. His busy career does not prevent him from fully indulging his passion for travel and his interests in filmmaking and drawing.

A gourmet snacking experience

A snack should be a moment of pleasure par excellence, so Léandre Vivier has designed it as a travel album. Each creation is inspired by the memory of one of his journeys that he associated with some aspect of pâtisserie française. Thus, it is both a tribute to French tradition and an introduction to the flavours of the world. Chocolate and chaï from India, strawberries and marigold leaves from Mexico, and lemon and green shiso from Japan; each dessert takes you on a journey of exploration. The gallery's latest temporary exhibition is dedicated to the latter, with a specific focus on a pivotal period in his work: the 1930s. It’s a fascinating look into an inspiring period when the artist was emerging from a creative slump.

The work of the artist through the Cahiers d'Art

The aim of this exhibition, entitled Matisse. Cahiers d'Art, the Pivotal 1930s, is not only to demonstrate the changes in the colours and compositions the artist used in his works, heavily influenced by a trip to Polynesia, but also to follow the scope of these changes through an essential artistic and literary journal of the time: the Cahiers d'Art. This approach also makes it possible to perceive the impetus brought by the artist’s competition with Picasso and the other great names of the artistic scene of the time such as Léger, Kandinsky, Mondrian and Duchamp.

Works very rarely seen in France

Drawing from the collections of the Musée de l’Orangerie, this exhibition also called on the archives of the Cahiers d’Art. You will thus find engravings, sculptures, films and photographs from the period that invite you to immerse yourself completely in this decade. Due to current renovation work on the Grand Palais, the Saut Hermès has been taking place at the Grand Palais Éphémère. This temporary wooden structure, a marvel of design and technique, is situated at the foot of the Eiffel Tower and provides the perfect setting for this competition. The three days of the event also feature shows and carriage races to demonstrate all the facets of equestrian artistry. What’s more, a celebratory night is planned for Saturday March 18th, adding an extra touch of magic to the whole.

A passion for the product

To put together the new cocktail menu for the Bar Charles of the Hotel Le Burgundy, our specialist Fabien Hideux combined two approaches. The first was to make a return to basics by offering classic cocktails that are sometimes overlooked, and the second involved extremely selective and careful sourcing to ensure that only the finest spirits from around the world and high-quality seasonal ingredients are used. That’s why the menu has such delights as nuts and artichoke, tea and pear, which sublimate the Romanov vodka, Hexagone gin and London Essence soft drinks.

This winter, why not opt for the sweet and warm flavours of Coffee N Tabacco. Combining the warmth of Tequila Vecindad, tobacco liqueur and coffee, this original cocktail is sweetened with dulce de lecche and spiced up with a hint of Amaro liqueur. Also an ideal choice for the end of winter, the Armin Julep blends Armagnac, chestnut, pear and cumin. The Théâtre du Palais Royal, an architectural jewel dating from the middle of the 17th century that was remodelled in the 19th, is alternately presenting three top quality productions. The first Edmond, by Alexis Michalik, was awarded 5 Molières. In an intoxicating style, it tells the incredible story of the writing of Cyrano de Bergerac by Edmond Rostand. The second, La Machine de Turing, received 4 Molières and takes a much more serious look at the life of the brilliant mathematician, Alan Turing. This is Aladdin, created by Jean-Philippe Daguerre and Igor de Chaillé. Brilliantly sung, danced and acted, this interpretation of the classic tale takes us through stunningly choreographed fights and sumptuous settings to meet more than forty colourful characters. Behind the bûche: the creative flair of a chef pâtissier

Pierre-Jean Quinonero worked for some of the finest establishments before becoming the chef pâtissier at the Burgundy. With his team, he designs the restaurant's desserts daily, as well as all the tea-time delights. For Christmas, he has created a bûche under a layer of crunchy chocolate, a soft biscuit with gluten-free chestnut flour, cocoa nibs, gianduja and hazelnut praline. At its heart, a grapefruit and yuzu confit to enhance the sweetness of the creamy chocolate and black cardamom. A true masterpiece!

For this special occasion, Guillaume Goupil, head chef at Burgundy Paris, has created a unique menu to accompany the wine selection chosen by sommelier Rémi Badjoint in collaboration with the estate's teams.

For this special occasion, Guillaume Goupil, head chef at Le Burgundy Paris, has created a unique menu to accompany the wine selection chosen by sommelier Rémi Badjoint in collaboration with the estate's team.

During a unique evening on Wednesday 29 January 2020, the lucky guests who have managed to secure a table at Le Baudelaire will have the privilege of enjoying the finest dishes created by Guillaume Goupil, accompanied by some of the great names from the Carabello-Baum family estate.

During the dinner, gourmets will enjoy a 2015 Meursault Premier Cru ‘Genevrières’ 2015 to accompany purple sea urchin, followed by a Clos Marey-Monge Monopole 2016 to accompany duck foie gras, before getting down to business with the Simone 2017 cuvée paired with saddle of lamb. The Corton-Charlemagne Grand Cru 2017 will set the tone for the cheese course, before giving way to the Clos Marey-Monge 75 Rangs 2017 for dessert, the Chocolat Macaé, created, of course, by Pascal Hainigue.

During this moment of excellence, Rémi Badjoint, head sommelier at Burgundy Paris, will be accompanied by Victor Goichon, Head of Hospitality & Catering Paris at Château de Pommard, and Mathieu Courtois, Head of Private and Corporate Clients Paris. 30 hectares on the Himalayas

The Ao Yun vineyard is a unique terroir at the foot of the Meili Snow Mountains in northern Yunnan province in the foothills of the Himalayas. Protected from the monsoon, enjoying a dry air and mild temperatures, the area’s cabernet sauvignon and cabernet franc grapes, irrigated by descending torrents from the peaks and harvested by hand, yield superb wine, mixing peppery and fresh fruit flavour notes with a distinct finesse.

Plus Argentina, New Zealand, Spain...

You can also taste the fine wines of the Terrazas de los Andes, whose vineyards feed on the soil of the Cordillera des Andes plateaux, the unmissable Sauvignon Blanc of New Zealand’s Cloudy Bay, and the superb Numanthia from the centuries-old vineyards of the argillaceous hills of northern Salamanca. The wines produced are particularly powerful and long in the mouth ... A beautiful selection harmonised by our sommelier Kevin Digonnet with the delicious dishes of our chef Guillaume Goupil... Interested in the Cannes hinterland? The patio of the Burgundy has donned the mantle of the coastal town of Vallauris to welcome you amidst an atmosphere worthy of the great years of Picasso. Our intimate and delicately shaded patio offers beautiful table services featuring the colourful geometric patterns of the great ceramicist Robert Picault.

Grey-green, violet, orange ...

Pots, bowls, vases, water jugs, caquelons and small ceramic dishes were picked up by the art dealer Florian Daguet Bresson. All recall the colours and patterns dear to Pablo Picasso, and that’s no coincidence. Picasso and Robert Picault were neighbours in Vallauris. They met in 1946, beginning a long friendship and professional association during which the two artists influenced and learned from each other.

A pleasure to taste

Cheerful, stimulating, as pleasant to the eye as they are to the touch, the dishes of Picault go beautifully with those of our chief! Savour the wood-cooked monkfish tail with fennel, the roasted saddle of lamb or rhubarb poached with verbena, while comfortably seated on Jules Pansu cushions. It’s all part of the summer atmosphere that you can enjoy here on the patio of the Burgundy!

Amber is used to enhance legs with a discreetly tinted veil, while lemon fragrantly scents soap as well as hand cream and, when blended with watermelon, even moisturising and hydrating facial care products. As for grapefruit, it offers its exquisite fragrance to the scrub mask as well as the shower gel and works wonders of freshness when blended with yuzu.

With the success of its winter calendar, our partner Sothys has decided to design a summer version featuring the company’s wide range of products. It’s as pretty as it is fun. Invitation to the Voyage by Charles Baudelaire offers us an excellent point of departure. Jeremy Blanc, head barman of the bar Le Charles feels the call of the sea, the invitation of this vast world to slice the vanilla, smell the sake, squeeze the citrus and concoct a menu of summer cocktails that evoke the distant, the mysterious, the sensual.

And we’re on our way!

First stop, the USA and the sunshine and glamour of California, embodied by the cocktail called Lost in Hollywood that marries the flavours of bourbon and Louisiana with notes of rice syrup and Cajun spices. Then it’s on to the Caribbean for Queen Anne's Revenge, the Mexique with its spicy blending of mezcal, tequila and chilli, and Cordillière des Andes, in which stimulating mate is mixed with languid pisco.

Towards the Rising Sun

The journey continues to Asia, the Middle East and Africa before returning to Europe. Everywhere we can savour the wealth of the terroir via ingenious and innovative feats of mixology. We can attend the meeting of sake and yuzu, enjoy (a lot!) the mingling of galangal with coriander, and applaud the perfect synergy between fynbos gin, pineapple and avocado.

Welcome to the ice palace!

As soon as you step through the vaulted portal of this new Parisian address, it’s the light that will seize your attention first. Here, through a series of connected rooms, mirrors cast a thousand sets of reflections. Set at ceiling height and various angles, they play with your perception while enhancing your surroundings yet further. In delightful contrast with the warm Versailles parquet are the large chandeliers that sparkle like sculptured ice, suspended above glass cabinets displaying the season’s must-have accessories. Black and gold design elements emphasise the brand’s famous signature style and act as constant reminders of the Balmain savoir-faire as you blissfully browse this magnificent ice palace.

This June 16th is special for two reasons; Father's Day and the famous Prix de Diane horse race. Why not combine the two by treating your dad to a day at the races? Get him dressed up in his best elegant finery, take him to Chantilly Racecourse and ensure he has a day he’ll always remember.

The field of fillies

This Group 1 flat horse race - the highest level - brings together the best 3-year-old thoroughbred fillies to compete over 2,100 metres (1 mile, 2½ furlongs). The rider who wins this prestigious race is usually tipped to be a major contender in the equally famous Prix de l'Arc de Triomphe held in October at Longchamp.

Picnics and hats!

This event is as much about glamour and chic as it is about sport. Between the nine races scheduled for the big day, the atmosphere is full of good-natured fun and frivolity.
