The Easter Egg "Café-Croissant" by Pastry Chef Léandre Vivier

Once again this year, Pastry Chef Léandre Vivier reimagines one of Paris’ most iconic rituals: the timeless café-croissant.

For Easter, he moves beyond tradition with a bold creation, a monumental croissant with generous, rounded curves, sculpted like an egg and delicately poised in a cup of coffee.

Through this softly contoured silhouette, the Chef offers more than a Parisian nod. It reflects a craft that lies close to his heart: precision of line, repetition of form, and a deep attachment to the delicate layers that define true laminated pastry.

  • The café-croissant spirit carries through to the tasting. The shell reveals Valrhona’s 56% Sioka dark milk chocolate from Côte d’Ivoire, with intense yet beautifully balanced notes. At its core, an almond-coffee praline made with Panamanian coffee sourced from Maison Verlet unfolds with refined roasted aromas. Toasted croissant flakes, lightly caramelised, add texture and a subtle crunch to complete the experience.

Léandre Vivier Pastry Chef

Originally from Le Mans, Léandre trained in the schools of excellence from the very start of his career. Named Best Apprentice of France in 2013 and winner of the television contest Qui sera le prochain grand pâtissier? on France 2, as its youngest contestant, he went on to serve as Pastry Sous-Chef at the Four Seasons George V and as Sous-Chef at The Peninsula. He also worked at the Ritz, Le Meurice, Le Laurent in Paris and Apicius in Le Mans.

Awarded Talent Pastry Chef of the Year 2026 by La Liste, he has been Pastry Chef at Le Burgundy Paris since 2023, creating all of the House’s sweet signatures.

Creative and adventurous, Léandre draws inspiration from the flavors discovered on his travels, bringing a unique and exotic touch to the great classics of French pastry.
