Known for his generous cuisine and mastery of flavors, the chef offers a responsible gastronomy where the authenticity of ingredients is elevated. Through his creations, he reinvents the culinary experience with simplicity and boldness, providing guests with a unique and unforgettable journey.

 

A Journey Dedicated to Excellence

Mylo Levin’s career is a series of opportunities and formative experiences. After training at the Ferrandi School and starting in prestigious establishments, he joined the kitchens of Le Meurice Alain Ducasse in 2013, refining his discipline and culinary vision alongside Chef Christophe Saintagne.

He continued his learning at Restaurant Papillon before embracing new influences in Los Angeles, where he explored Asian fusion cuisine. In 2020, he became the Chef at La Villa Calvi in Corsica, developing a responsible cuisine deeply rooted in the local terroir.

In March 2024, he joined Hôtel Le Burgundy Paris as Deputy Chef, supporting Anthony Denon, with whom he had already collaborated at Le Meurice. This milestone marks another step forward in his career within Parisian haute cuisine.
